We live in one of the most diverse places in the world with the best food, so it's no wonder that with Greek, Thai, and Brazilian food all within a block we order in all the time.  Cooking can be pretty tough though because one of us is lactose-intolerant, doesn't eat anything green (except peas and lettuce), wont touch tomatoes & peppers, basically lives on meat, potatoes & pasta, and the other is a vegetarian.. However, every so often we try cooking, usually a nice pasta. Tonight after watching Everyday Italian we made Swiss Chard and Sweet Pea Manicotti and it was delicious! Typically when we have manicotti we use fresh crepes but keeping the pasta al dente contrasted nicely with the rich and creamy sauce.  We also used fresh parsley because the basil at the store looked kind of ishy. Obviously we haven't mastered the art of presentation yet, so if you want to see how it should look, or try the recipe click here:
